Black Bean & Mango Salsa

I love salsa. They are so versatile and simple to make you can use them with tortilla chips, in wraps, as sides to a main meal. You can put just about anything in them. Black beans are fast becoming a favourite, and while mangos are still in season they make a magic match. Here is another salsa recipe. Measures below are for guidance, most days I just chop and mix depending on which ingredients I want to feature most.

Black Bean & Mango Salsa

Serves: 2 Prep Time: Cooking Time: Nutrition facts: 200 calories 20 grams fat

Ingredients

½ cup of black beans (soaked for overnight)

½  medium avocado

1 medium mango

1 red chilli pepper

½  red onion diced

2 tbs lime juice

1 small bunch of cilantro (coriander)

Salt and black pepper to season

Instructions

  • De-seed and peel the avocado by scooping out the flesh
  • De-seed and peel the mango. Then cut the flesh off of the seed
  • Dice the onion
  • Slice the red chilli into thin rounds. Remove the seeds if wish to reduce the heat
  • Place all the ingredients in a bowl and mix with a spoon
  • Squeeze the juice of the lime into the bowl
  • Rough chop the cilantro and mix into the bowl
  • season with salt and pepper as desired and serve
