Mango & Avocado Salsa

Mangos are in season, as are avocados, so it’s a perfect excuse to make mango avocado salsa.  I remember as child, every time we had house guests my mother would offer them a mix of local snacks; groundnut, chin chin, plantain chips, biscuits to accompany their soft drink or cup of tea. You would never come visit and not get something to eat. This was her way of trying to avoid them staying for a meal, which in Nigeria used to happen often, as she didn’t plan for the extra headcount. In the age of mobile phones and WhatsApp, gone are those days of unexpected house guests.  It is fun entertaining guests who stop by. Next time you have visitors, why not try surprising them with a refreshing snack that celebrates local produce that’s in season? A freshly made salsa that is paired with local crisps, such as plantain chips and some not-so local tortillas would be nice. What do you normally serve your guests when they come a knocking?

This dish was so easy to make. Measurements are not required, so just chop and mix, but rough quantities for the ingredients are added below for guidance.

Mango & Avocado Salsa

Serves: 2 Prep Time: Cooking Time: Nutrition facts: 200 calories 20 grams fat

Ingredients

1/2 medium mango, seeded and diced

1/2 medium avocado, seeded and diced

1/2 cucumber, diced

1/4 onion diced

1 chilli pepper, diced

1 small bunch of cilantro (coriander)

1 small lime

Salt to season

Instructions

  1. De-seed and peel the avocado by scooping out the flesh
  2. De-seed and peel the mango. Then cut the flesh off of the seed
  3. Dice the cucumber, red bell pepper, onion
  4. Place all the ingredients in a bowl and mix with a spoon
  5. Rough chop the cilantro and mix into the bowl
  6. Squeeze the juice of the lime into the bowl
  7. season with salt and pepper as desired
  8. Serve with plantain chips, tortilla chips, or any dipping chip of your choice
